Stag Canyon sits on the eastern edge of the Santa Ynez Valley and is perfect for growing world class Bordeaux varietals with its rocky, well drained soils and tight spacing. This Cabernet was aged for 36 months in 40% New French and American barrels to create a lush, layered wine reminiscent of the best Cabernets from Napa’s Oakville and Rutherford districts.
Rich aromas of blackberry, currant, and dark cherry that give way to rich aromas of crème de cassis, sweet pipe tobacco, milk chocolate and vanilla. Layered flavors of blackberry, plum, and cassis, lead to a rich core of flourless chocolate cake, bakers spice, vanilla, leather, and dark cherry. The finish is long and rich, with supple tannins that last.
